Arjuna is a tree more than 20 feet tall that has white-gray fleshy bark. You can recognize it by its oval leaves, yellow flowers and winged fruits. The bark is most commonly used in Ayurvedic nutrition because it is the richest in polyphenols and other active substances.

Polyphenols are bioactive phytochemicals that form the doshic character of plants based on colors, scents, and tannins. Dosha (vata, pitta and kapha) are Ayurvedic principles that have no equivalent in modern science.
