Curry leaves have a distinct flavor and are often added to dal dishes, dal soups, and many other Asian dishes. It is a typical Indian spice and is used in the same way we use bay leaves. The leaves are aromatic and have a unique taste reminiscent of citrus and lemongrass.

Despite the name, they do not have much in common with the Curry spice mixture (usually made of turmeric, cumin, chili, ginger, coriander...) or with Curry food, which is a typical Indian stew. Curry leaves are the dried leaves of the curry tree, which belongs to the citrus family.
